Curing and canning products. Found this site looking for Instacure #1 aka Prague Powder #1.

Meat is to be cooked and then consumed while still hot.
Preserving is reserved for vegetables, a group of semi edible substances just above fungus. Salt is added to this group to cover for it's lack of flavours
Fermenting is also reserved for members of flora. Fermenting fauna is just wrong.
Though one might make an exception for fermenting cats.
