    G'day All,
    I'm hoping there are some cooks or chefs out there that can help me.I'm reading a recipe that calls for a Nosey spoonful of tomato paste.
    What's a Nosey spoonful?

    I think its one of those terms that is a bit like how long is a piece of string?

    A generous spoonful I think.

    A bit like a dollop...

    It's an idealized old cooking term.

    It means a sufficient quantity to make the smell from the contents of the spoon to be able to be smelt or savored without the need to shove it up to your nose to notice the contents aroma.

    Dates back to the early 1800s.

    The old cooking terminology term I like best comes from an early text in France. Prior Escofier by about 100 years.

    Probably in this case it means generous, as in nose shaped, or heaped.
