The whole idea of having an animal slaughtered in a particular fashion is to ensure the product is safe for human consumption.
In antiquated times: the slaughter, butchery, storage, and cooking processes were all laid out in the legal documentation of the time... AKA "religious lore"... today these processes are written out in a legal format and are less likely to result in public execution for those that deviate. BUT, the net result is much the same and both methods are intended for the public's safety. One method, however, is antiquated and based upon no understanding of microbial life forms. Unfortunately, this one particular method, is widespread across a large population still living in areas that have little or no understanding of science and microbial life... and these peoples are being rapidly propagated across the lands of our "more modern" existence.
We are now facing a situation where the more Developed World is meeting the Dark Ages... but it's not the "dark ages" for them, it is their "here and now"... and when they're dumped in the middle of it (modern life) they are not academically or socially prepared to deal with it. It is culture shock.
What do we do about this situation for everyone's benefit? (If you're still reading.) Now you are beginning to understand the problem.
As a side note: I have no problem with the physical slaughter process; my family has long been cutting throats to fill it's bellies... most of it, no doubt, we ate.
