    Default Lamb Livers - Cooking/Eating?

    Anyone here ever cook with Lamb Livers?
    Or have Livers of any kind in their regular diet or family tradition?

    A guy i have been buying Beef Cheeks off, also has heaps of Lambs Livers.

    Im just not brave enough to try them?
    Mostly because i have no idea what to do with them...

    Anyone here recommend a dish with Livers?

    The guy i was speaking to said he'd had it at an Indian Restaurant, where it was sliced thin, seasoned with a dry rub, then flash fried.
    He said it was awesome

    Germans make sausage (Leberwurst) out of them and French make pâté.
    I remember having to eat livers as a child but did not like them. They were just fried in a pan with lots of onions to help cover the disgusting taste. The Leberwurst was OK on bread because they spiced it well. We also ate Wurst made of tongues and blood (Zungenwurst) on bread.

    sliced thin tossed in seasoned flour,fried with a couple of rashers of bacon served with mashed spuds and peas
    with gravy.

    My Mum used to marinate them in milk overnight then as per Dashinson.
    Ahhhh memories, Think we'll have lambs fry tomorrow night
    In hindsight I should have posted my Facebook status as: "I've blown the head gasket on my 1997 XR3i" rather than "I've just buggered a 14 year old escort".
    The police still haven't seen the funny side, my lap top's been confiscated and the wife has gone off to her mum's.

    I love kidneys, lambs fry not so much as the temptation is to overcook it. Love it at the local club. They do it like dashinson said, with bacon, mash and gravy.
    The fact that there's a highway to hell and a stairway to heaven says a lot about the anticipated traffic flow.

    Yeah, that is where i was wondering, as i like Steak and Kidney Pie... But Livers?
    Can they be substituted that way?

    Lambs Fry and Bacon !!!!
    Cut the Fry into cubes about 25 MM (ONE inch square) , 2 or 3 bacon rashers, each one the size of the Fry, and cut into strips or buy ready cut.
    One Onion diced,sliced whatever.
    You can flour it if you want.
    Heat frypan (electric or stove) with a small amount of Butter or oil add mix and gently stir to prevent sticking.
    The meat will change colour and texture as it cooks, ie lighter in colour and softer to the point where a fork can easily penetrate the cube but not quite falling apart.
    By now there should be some juices from the FRY to which you may add a little Gravy Powder) which will thicken it but do it sparingly.
    Many years ago when my Kids were little, I did the above recipe and added some mixed vegetables and Corn to fill the Tribe up and they wernt very keen to try it when they first saw it, BUT the smell made your mouth water and one taste was enough for them to lick their plates clean and do an 'Oliver Twist' of MORE please..........but there wasnt.
    You can cut up some tomato or add a can of one of the many varsities with Herbs and Garlic etc.
    Keep stirring and cook until its done to your taste, then enjoy.

    I believe its recommended you should not eat LIVER more than once a week or 2 and make sure it wont conflict with any medication or health issues you may have.
    Liver was supposed to contain a lot of Iron and was 'Good For Your' but thats not the case now I gather.

    If you make more than you can eat now, it can be frozen for later.

    Frypan with fried onion, some oil and salt.

    Grew up on having them once a week, mixed with Kidney and some meat and fresh bread....yum loved it.

    Have some blood sausages done at the same time and im in heaven......

    What about TRIPE, thats now a long forgotten dish so for those who dont know what TRIPE is (apart from Politicians speeches) its the lining of a Cow's stomach, white and cellular in appearance.

    Yeah, i'm not sure about Tribe gordon, that does freak me out a little.

    The Lambs Livers are sold as" Livers" here and the butcher has HEAPS!!!!
    They look good, rich, glossy, firm... I thought it was another pile of Beef Cheeks at first, but as i dived in closer, the package said "Lamb Livers"
    He also had a heap of Hearts too.

    I can go Kidneys when mixed
    I'll try these Livers
    Hearts.... Mmmmm yeah, not sure
    Tripe, gawd, that stuff looks horrible.

    One thing that gets me across the line, is a lot of Chefs love this stuff, well, some anyway.
    Then again, a Chef here told me a "Goat Fish" was he best eating fish he's had, so i tried one..... YUK!

    Strangely enough, it's the texture of lambs fry that puts me off. Sort of slimy (but not really). I'll take a nice steak over Lambs fry or tripe any day.
