You don't have to root it just download the XSA firmware, according to the link you lose VoLTE. Have a read and you need Odin software to do it. There is anther way Samsung Experience Store do it for free but you need to make an appointment.
Just purchased a second had Samsung S7 for the Mrs.
It's a Telstra branded handset.
I know it will work just fine with any other sim.
But is there a way to remove all the Telstra preloaded rubbish?
Or does that mean rooting and a new ROM?

Unfortunately you are still left with the Samsung bloatware!
I just deleted what i could
And removed what i could....
Seems ok, works fast.
