What is possible with your vehicle depends on many things
Always best to find the dealer software and leads
Jeep are pretty wide spread, one of the Jeep forums must have a copy and appropriate adapter required.
Some you can do all kinds of things.
As well as changing the VIN number

I have 2 of the $20 elm 327 devices 1xbluetooth for android and 1xwifi for apple devices .I own a 2006 ptcruiser and a 2010 honda civic and both work faultlessly .

depending on the software and setup you have you
can also run real time apps on the display.
i have a 7" eonon stereo so when doing trips i can turn it on
and run it with real time engine stats showing in
graphs on the screen.
Probably the main purpose for having a OBD2 reader would be when your "Check Engine" or another of those fault lights appears
ABS etc.... You can scan the vehicles ECU and find out a more detailed description of the fault.
You may also be able to clear the Fault Code and hence reset the Engine Check light on your dash
A scanner will also allow you to read fault codes thrown that do not illuminate the "Check Engine" light
If your vehicle has a "Service Indicator" in the dash cluster, you can also reset that after a service
Also as fandt has mentioned, you can run more accurate gauges too
EG: My factory temp gauge doesn't move once its got to operating temp, as the range factory programmed in is huge!
Watching the actual engine temp via OBD2 will show every degree of movement

First thing i bought for my car, it can read and clear codes, adjust parameters of the CCF (car config file) like adjust the suspension height, change the dash layout, change the lights, reprogram a new key fob as well as live engine data like temp of engine, trans, transfer case etc.

any elm device will perform basic tasks on the jeeo.
if you want to really do some stuff, get alfa obd for fiat/chrysler products......
be warned though, you can stuff things up....

another option which is useful is a Scanguage 2. its a small display which is left plugged into the OBD and monitors a handful of functions at once and can also clear fault codes.
you need to do a bit of basic data entry but its easy enough. For example in my Prado 2.8 -
