I need to add a low coolant sensor to my car.
I have the sensor with float, alarm and led light, but the output from the sensor isn't an on off switch, but high and low resistance (180ohm/1200ohm) using a magnet in the float.
What I need is something to take the signal from the sensor and turn it into voltage on/off, but I don't know what such a device is called.
Any ideas?

sounds like the sensor is only a reed switch , which should be able to trigger a small relay.
Heaps of ideas, but you haven't really said what you want to do? If it has an alarm & LED light ...do these just turn off/on? What do you want to turn on/off? If it's a reed/mercury switch as suggested, a small relay is enough ; if it's not like that, you'll need a transistor driver.
