It's there but greyed out and won't allow the slider to move to draft.

I have 3 6260's. The draft setting comes up on the drivers for those but not on the 5000 series I also have.
Why would you want draft anyway? The ink it would save would be inconsequential. If you were that concerned, just buy some 680 aftermarket ink carts and put them in when you want to print something unimportant. You can swap out the carts on the fly with no problem and put the ones you remove back in.
Have you got the correct drivers downloaded from the Canon website for this particular printer?
