I have monitor stand that I would like to remove the rectangular plastic back. Does anyone know how to do this so that it can be re-assembled? The back is shown in one of the pictures.

If you mean the thin black sheet of plastic on the back, it is likely either just glued on or attached with screws that would be accessible after you remove everything from the front.
Try first with a hair dryer if any adhesive gets soft so you could carefully pry it off.

Update: A deletion of features that work well and ain't broke but are deemed outdated in order to add things that are up to date and broken.

I have one similar and there is a push button on the lower edge hidden by the stand that when depressed will allow the monitor to be slid up and removed. Have a good look for the hidden button.

just drill and tap the alloy and place board risers with a plate to mount
the pc ( is it a PI )
similar size and no weight , i did a similar setup a while back for a bloke
i just drilled and tapped the alloy and then mounted MB risers with a plate
and fixed the pi or in your case the droid to that.
Decent double-sided tape should be more than adequate.
