take it to the auto elect and get it fixed.
if it keeps breaking take it back till its fixed.
are the belts aligned properly? are the belts being heated up or have signs of getting hot?
You say you changed the water pump?
Do the pulleys all align up, if you put a straight edge against one pulley, does the end of the straight edge line up with the next pulley?
Did you fit the right water pump if its pulley does not align up?
Is your belt tension correct?
When you say chewing belts, what sort of belts, V belts? micro grooved belts? What is being chewed, the side wall?
Micro belts need to need carefully checked when fitted so that the grooves fit in the pulley slots correctly on every pulley.

is the belt squealing underload or fast acceleration?
check if you have the correct belt fitted
I'm with Godzilla on this one, Especially when its throwing belts If them pulley are not lined up right your going to get them sort of problems
Mite be a silly question but did the water pump pulley get bolt back on the right way around,,?
I don't know the 121's but some of them little cars have waterpump pulleys that look the same on both sides but there is a offset on one side and if bolted on wrong side it will throw your pulley alinement out and stuff your drive belts in not time.
