I worked with a guy who had a thing about war movies, he decided to grab Letters from Iwo Jima and Flags of Our Fathers and cut out the flash backs / soppy silly bits and combine them to make a fantastic realistic view of the conflict.
I really enjoyed the series Band of Brothers so much I actually bought the DVD set

Definitly "Saving private Ryan"
After leading a company of Rangers in the battle for Omaha beach on D-Day, Captain John Miller is sent on a mission to find paratrooper Private James Ryan and bring him home safely. Ryan's three brothers have all been killed in action and the Brass want him returned to his family. He is fighting with his unit somewhere inland, but no-one knows where.
Miller chooses seven men for this dangerous mission. The squad picks its way accoss the devastated countryside - losing two members in skirmishes with the Germans. Eventually, they find Ryan dug in with his unit and awaiting a German counter attack. He refuses to leave his comrades and Miller agrees that his squad will stay to help them defend their position. The Germans attack in overwhelming numbers and Miller and most of his squad are killed, but Ryan survives and makes it home.
So beautiful.

Kelly's Heroes, von Ryan's Express, Tuskegee Airmen, Too Late the Hero, but my favourite doesn't strictly qualify if I assume by "War Movie" you mean second world war, but I liked

Full Metal Jacket. That movie is insane and definitely shows the true gritty underside of war. It's really a scary movie because it's so dang real. I don't know, I also like Saving Private Ryan and Black Hawk Down.

Enemy at the gates. I've watched it a dozens of times. I got a thing for snipers, always wanted to be one, too bad my eyesight is poor. But I play a sniper in every fps game!

I like Saving Private Ryan, and When we were soldiers. I think they are both good movies.
My two all time favorites are Good Morning Vietnam and Inglourious Basterds. I think if I had to choose one I'd go for Inglourious Basterds, it was the first time I saw Christoph Waltz and I became a fan.
All quite on the western front.
We were actually made to read the novel for English at high school, back then being young (and a dickhead), non of us were mature enough to give the book the respect it deserved, years later seeing the movie and being a bit older changed my view on it.
Stalingrad was another one i enjoyed.
I also loved Apocalypse now, i use to walk around work quoting "i love the smell of napalm in the morning" when things were getting a bit out of control.....

I agree about Saving Private Ryan. War movies are always gonna come and go, but this will always remain a classy flick. The Hurt Locker was a decent war movie as well and with a female director too.
Red Dawn (2012) is my favorite war movie watched so far. I have watched this movie 6 times to till date.
The Great Escape - Can't go past, based on real events, includes an Aussie (that was never caught!) moonshine and motorbike jumping!
I have to agree with you, its a great movie that I never get sick of even though I have seen it so many times I have lost count. But there was no Australian that was never caught, of the 3 who succesfully escaped and were not caught, 2 were Norwegian and one was Dutch. 4 members of the RAAF who escaped were captured and executed as part of the 50 who were made an example of.
They just dont make men like Roger Bushell (Roger Bartlett in the film) any more.
