    Oh yes they will.
I have one rear car cam and another connected to a InCar Cam and both 'see' very differently depending on the illumination so does a hand held digital video cam
Neither of those are likely to possess high quality optics and processing, nor are they expected to be used in very low light. For example your dashcam can rely on you having your headlights illuminating most of what it captures. Whereas decent surveillance cameras are expected to perform in these environments as a normal occurrence.
I would try to add a suitable light fitted with a motion detector either solar or Mains powered to cover the area the camera can 'see' and not to expect the camera to show a clear image over too great an area.
    Nope. Don't do that.

That light coming on all of a sudden will cause the iris on the camera to move, and perhaps trigger a switch between day/night image as well. If you can nominate lighting, consistency is the key wherever possible, either visible light or infrared.

Also, remember when "solar powered light" was an Irish joke? How things change...

I dont have the DVR unit plugged in to a screen.

I connect to it when out via my mobile with an Android app called RX Cam Pro.
The cheapest scabbiest cameras I come across will give a picture like that in daytime. It's the nighttime pics that tell the story
