Programmer
OK would like to get pointed in the right direction.
What programmer would it be best to get to have a play with both gold and gamma cards.
Does any required software come with programmers or do you need to find.

Most people can get away with damned near any Phoenix, 3.58Mhz programmer (Jaycar, Elvis etc etc) for the Golds and indeed Gammas but it really depends on what you REALLY want to do.
For instance if you feel you have the skill and knowledge to create a new gamma then I would assume you will need a Cas3 at the minimum.
Buy a Jaycar. It will do everything you asked about above. All the software is available on the net.
